Description

Ingredients

  • 1 medium pumpkin, butternut squash, or acorn squash
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Optional herbs (rosemary, thyme), to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the gourd into chunks or slices.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Spread in a single layer on a baking sheet.
  5. Roast in the oven for 25 to 40 minutes, checking for crisp edges and tenderness.
  6. Once done, enjoy as is or add to your favorite dishes!

Notes

Watch for browning and softness to ensure roasting is complete. You can also roast the seeds for a tasty snack.
