Instructions
- Brown the Beef: In a large pot, heat the olive oil over medium-high heat. Add the beef cubes in batches and brown on all sides. Remove the beef and set aside.
- Sauté Vegetables: In the same pot, add the chopped onion and garlic. Sauté for 3-4 minutes until softened and fragrant.
- Combine Ingredients: Stir in the carrots, potatoes, and celery, and cook for another 5 minutes. Add the tomato paste and mix well.
- Deglaze with Guinness: Pour in the bottle of Guinness, scraping up any browned bits from the bottom of the pot. Bring it to a simmer.
- Add Broth: Return the browned beef to the pot along with the beef broth, Worcestershire sauce, thyme, and rosemary. Season with salt and pepper.
- Simmer: Bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for 1.5 to 2 hours until the beef is tender and the flavors meld together beautifully.
- Adjust Seasoning: Taste the stew and adjust seasoning as necessary before serving.
- Garnish and Serve: Ladle the stew into bowls and garnish with freshly chopped parsley.
