Bold & Flavorful Haitian Epis Recipe to Transform Any Dish


Ingredients

Scale
  • 1 large green bell pepper, chopped
  • 1 large red bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 1 bunch green onions (scallions), chopped
  • 1 head of garlic, peeled
  • 1 bunch of parsley, stems removed
  • 1012 sprigs of fresh thyme
  • 12 Scotch bonnet peppers (optional, for heat)
  • 12 teaspoons salt (adjust to taste)
  • 1 teaspoon black pepper
  • 23 tablespoons lime juice or vinegar
  • 1/2 cup olive oil (or vegetable oil)
  • 1/2 cup water (adjust as needed for consistency)

Instructions

  1. Wash and roughly chop all vegetables and herbs. Remove seeds from peppers and Scotch bonnet if using. Strip thyme leaves from stems.
  2. Combine all ingredients—bell peppers, onion, green onions, garlic, parsley, thyme, lime juice or vinegar, salt, pepper, oil, and water—in a blender or food processor.
  3. Process until a thick, slightly textured paste forms. Add a bit more water for smoother consistency if needed.
  4. Adjust salt, citrus, or heat to taste for perfect balance.
  5. Transfer Epis to airtight jars or containers and refrigerate.
