- Heat coconut milk and sugar in a saucepan over medium heat, whisking constantly until it reaches a gentle boil (about 3-5 minutes).
- Slowly incorporate the cornstarch-water mixture into the warm coconut milk while whisking continuously.
- Reduce heat to low and cook for an additional 10-15 minutes, whisking frequently, until the mixture pulls away from the sides of the pan.
- Pour the mixture into a greased or lined 8×8 inch pan.
- Let it cool for 15 minutes at room temperature, then refrigerate for 1-2 hours until set.
