Ingredients

  • 1/2 to 3/4 cup natural peanut butter
  • 34 oz dark chocolate
  • Sea salt (optional)
  • Vanilla extract (optional)
  • Chopped nuts or seeds (optional)
  • Coconut flakes or dried fruit (optional)

Instructions

  1. In a mixing bowl, combine puffed quinoa and peanut butter until well mixed.
  2. Melt dark chocolate in a microwave-safe bowl or double boiler until smooth.
  3. Pour melted chocolate into the quinoa mixture and stir until evenly coated.
  4. Line a muffin tin with paper liners or grease it lightly.
  5. Spoon the mixture into the muffin cups, pressing down to pack it tightly.
