Ingredients

  • 2.0 tablespoons olive oil
  • 4.0 cloves garlic, minced
  • 1.0 tablespoon fresh rosemary, chopped
  • 1.0 tablespoon fresh thyme, chopped
  • 1.0 tablespoon fresh parsley, chopped
  • 1.0 teaspoon Dijon mustard
  • 1.0 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.25 cup breadcrumbs (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, combine the minced garlic, chopped rosemary, thyme, parsley, Dijon mustard, salt, pepper, and paprika. Mix well to create a fragrant herb paste.
  3. Pat the pork tenderloin dry with paper towels. Rub the entire surface with the olive oil.
  4. Spread the herb mixture evenly over the pork tenderloin, coating all sides thoroughly. If adding breadcrumbs, press them into the herb coating.
  5. In an oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Add the pork tenderloin and sear for 2-3 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven. Roast for about 20-25 minutes or until a meat thermometer reads 145°F (63°C).
  7. Remove the skillet from the oven and cover the pork tenderloin loosely with aluminum foil. Allow it to rest for 5-10 minutes.
  8. After resting, slice the pork tenderloin into medallions and serve with your choice of sides.
