- 1.0 pound pork tenderloin
- 2.0 tablespoons olive oil
- 4.0 cloves garlic, minced
- 1.0 tablespoon fresh rosemary, chopped
- 1.0 tablespoon fresh thyme, chopped
- 1.0 tablespoon fresh parsley, chopped
- 1.0 teaspoon Dijon mustard
- 1.0 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon paprika
- 0.25 cup breadcrumbs (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine the minced garlic, chopped rosemary, thyme, parsley, Dijon mustard, salt, pepper, and paprika. Mix well to create a fragrant herb paste.
- Pat the pork tenderloin dry with paper towels. Rub the entire surface with the olive oil.
- Spread the herb mixture evenly over the pork tenderloin, coating all sides thoroughly. If adding breadcrumbs, press them into the herb coating.
- In an oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Add the pork tenderloin and sear for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven. Roast for about 20-25 minutes or until a meat thermometer reads 145°F (63°C).
- Remove the skillet from the oven and cover the pork tenderloin loosely with aluminum foil. Allow it to rest for 5-10 minutes.
- After resting, slice the pork tenderloin into medallions and serve with your choice of sides.
