- 4 tablespoons Unsalted Butter
- 4 medium Yellow Onions
- 2 cloves Garlic
- 8 cups Beef Broth
- ½ cup Dry White Wine
- 2 sprigs Fresh Thyme
- 1 leaf Bay Leaf
- 1 medium Baguette
- 1 cup Gruyère Cheese
- ½ cup Parmesan Cheese
- ¼ cup Chopped Fresh Parsley
Instructions
- In a heavy-bottomed pot, melt butter over medium-low heat. Add half of the sliced onions with a pinch of salt and cook for about 35 minutes until golden brown.
- Increase heat to medium-high, stir in minced garlic cloves and remaining onions. Cook for another 5 minutes. Add dry white wine, deglazing the pot and let it reduce.
- Pour in beef broth and add thyme and bay leaf. Bring to a simmer over medium heat for 15 minutes.
- Preheat oven’s broiler and position rack 6 inches from heat source.
- Place sliced baguette pieces on a baking sheet and broil for 1-2 minutes per side until lightly golden.
- Ladle the soup into oven-safe bowls, top with baguette slices and a mix of Gruyère and Parmesan cheese. Broil for 2-3 minutes until cheese is melted and bubbly.
Notes
- Use gluten-free baguette if needed.
- Gruyère can be swapped with Comté or fontina.
- Optional garnish with parsley.
