  • Tonkatsu sauce

Instructions

  1. Start by rinsing 2 cups of short-grain rice under cold water until the water runs clear. Drain and add it to a rice cooker with 2 ½ cups of water. Cook according to your rice cooker’s instructions. If you don’t have one, combine the rice and water in a pot, bring it to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes.
  2. While the rice cooks, take 1 pound of beef cutlets and pound them to an even thickness of about ½ inch. Season both sides with salt and pepper. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  3. Dredge each cutlet in flour, shaking off the excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat it with panko breadcrumbs, pressing gently to adhere. Repeat with all cutlets.
  4. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the breaded cutlets, frying in batches if necessary to avoid overcrowding. Fry for about 3-4 minutes on each side until golden brown and cooked through. Use a slotted spoon to transfer the cutlets to a paper towel-lined plate to drain excess oil.
  5. Slice the fried cutlets into strips. In bowls, layer a serving of rice, topped with the sliced cutlets. Add a generous drizzle of tonkatsu sauce over the meat. Garnish with shredded cabbage and chopped green onions. Optionally, serve with pickled ginger for an extra tang.
