Description

This Irresistible Cottage Cheese And Spinach Crustless Quiche is a delightful twist on the classic quiche, offering a creamy and nutritious meal without the hassle of a crust. Perfect for brunch, dinner, or a healthy snack, it’s easy to make and full of flavor!

Ingredients

Scale
  • 4 large eggs
  • 1 cup low-fat cottage cheese
  • 1 cup shredded cheese (cheddar or feta)
  • 2 cups fresh spinach (or equivalent thawed frozen spinach)
  • 1 small onion (diced)
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (dill or parsley) or dried herbs (basil or thyme)
  • Olive oil for sautéing
  • Cooking spray or additional olive oil for greasing the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium skillet, heat a splash of olive oil over medium heat. Add about 2 cups of fresh spinach (or the equivalent amount of thawed frozen spinach) and sauté until wilted, about 2-3 minutes. Remove from heat and set aside.
  3. In a large mixing bowl, whisk together 4 large eggs, 1 cup of low-fat cottage cheese, and 1 cup of shredded cheese (if using). Season with salt, pepper, and your choice of herbs. Mix well until combined.
  4. Fold in the sautéed spinach and any additional ingredients you like, such as diced onions or bell peppers, ensuring everything is evenly distributed throughout the egg mixture.
  5. Lightly grease a 9-inch pie dish or quiche pan with cooking spray or a bit of olive oil to prevent sticking.
  6. Pour the egg and spinach mixture into the prepared dish, spreading it out evenly. Bake in the preheated oven for 30-35 minutes or until the quiche is set and the top is golden brown.
  7. Once baked, let the quiche cool for about 10 minutes before slicing. This makes it easier to cut and serve. Enjoy warm or at room temperature!
