  • 2 tablespoons melted butter
  • 2 (8 ounce) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped pistachios
  • 1/4 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/4 cup chopped pistachios for topping
  • 2 tablespoons chopped pistachios for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, combine crushed graham crackers and melted butter. Press evenly into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and granulated sugar until smooth.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Fold in 1/2 cup finely chopped pistachios.
  6. Pour the filling over the graham cracker crust.
  7. Bake for 50-60 minutes, or until the center is almost set.
  8. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  9. Remove from oven and let cool completely on a wire rack.
  10. In a small bowl, whip heavy cream and powdered sugar until stiff peaks form.
  11. Spread the whipped cream topping over the cooled cheesecake.
  12. Sprinkle with 1/4 cup chopped pistachios for topping and 2 tablespoons for garnish.
  13. Chill for at least 4 hours before serving.
