Description

Ingredients

  • 4 medium sweet potatoes (about 2 lbs), peeled and chopped
  • 1/2 cup unsalted butter
  • 1/2 cup whole milk or heavy cream
  • 1/2 cup dark brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 3 cups mini marshmallows

Instructions

  1. Boil sweet potatoes in salted water until fork-tender, about 15-20 minutes. Drain.
  2. In the pot, mash sweet potatoes with butter, milk, brown sugar, cinnamon, and nutmeg until smooth.
  3. Preheat oven to 350°F (175°C). Transfer the mixture to a greased baking dish.
  4. Top with mini marshmallows, piling them high.
  5. Bake for 25-30 minutes until marshmallows are golden brown.
  6. Let cool slightly before serving warm.
