Description

A deliciously easy Keto Grinder Salad that combines fresh vegetables, savory meats, and creamy dressing for a satisfying low-carb meal.


Ingredients

  • 1 head iceberg lettuce, chopped
  • 1 medium tomato, diced
  • 1/2 red onion, thinly sliced
  • 6 slices deli turkey
  • 6 slices deli pepperoni
  • 4 slices Havarti cheese, cut into strips
  • 4 slices Colby Jack cheese, cut into strips
  • 1/2 cup sliced banana peppers
  • 2/3 cup mayonnaise (preferably avocado oil mayo)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, grated
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon cracked black pepper

Instructions

  1. In a medium bowl, combine the mayonnaise, grated Parmesan cheese, red wine vinegar, and garlic. Add the Italian seasoning, red pepper flakes, salt, and cracked black pepper. Whisk until smooth and well combined. Set aside.
  2. In a large salad bowl, add chopped iceberg lettuce, diced tomato, and sliced red onion. Add turkey, pepperoni, Havarti, Colby Jack cheese, and banana peppers.
  3. Drizzle about half of the dressing over the salad and toss to coat. Add additional dressing as needed. Serve immediately or chill briefly before serving.
