  • 1 tablespoon lime zest
  • Whipped cream, for topping
  • Extra lime zest or thin lime slices, for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form a crust.
  4. Bake for 8–10 minutes, until lightly golden. Remove and let cool slightly.
  5. In a medium bowl, whisk together egg yolks and lime zest until fluffy, about 2 minutes.
  6. Slowly add sweetened condensed milk, whisking continuously until smooth and creamy.
  7. Stir in key lime juice and whisk until fully incorporated.
  8. Pour the filling into the baked crust and smooth the top with a spatula.
  9. Bake for 15 minutes, or until the filling is set but still slightly jiggly in the center.
  10. Remove pie from oven and allow to cool at room temperature, then refrigerate at least 3 hours (preferably overnight) for best flavor and texture.
  11. Before serving, top with whipped cream and garnish with lime zest or slices.
