Description

This cheesecake features a creamy filling with bright lemon, zesty lime, tangy cherries, and a sweet pistachio crunch. It’s the perfect dessert for any occasion!


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Zest of 1 lime
  • 1 cup canned cherries, drained
  • 3/4 cup shelled pistachios, chopped

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and powdered sugar until smooth.
  4. Add sour cream, eggs, vanilla, lemon zest, and lime zest; beat until well combined.
  5. Fold in cherries and pistachios.
  6. Pour the filling into the crust and spread evenly.
  7. Bake for 45-50 minutes, until the center is set.
  8. Remove from oven and let cool, then refrigerate for at least 4 hours, preferably overnight.
  9. Serve chilled, garnished with extra cherries and pistachios.

Notes

For best flavor, let the cheesecake chill overnight. If using frozen cherries, make sure to drain them well to avoid a soggy cake.
