Instructions
- Rinse the lentils under cold water. Chop the onions, carrots, and greens. Measure out spices.
- Heat olive oil in a Dutch oven or large pot over medium heat. Add onions and carrots. Sauté for 5-7 minutes until softened and onions are translucent.
- Stir in minced garlic, curry powder, red pepper flakes, and black pepper. Cook for 1 minute until fragrant.
- Add rinsed lentils and vegetable broth. Bring to a gentle boil.
- Reduce heat to low, cover, and simmer for 30-35 minutes, until lentils are tender.
- Add collard greens or kale and lemon juice. Cook for 3-5 minutes until greens are wilted and tender.
- Taste and adjust seasoning with salt, pepper, or more lemon juice as needed.
- Serve warm, garnished with fresh herbs and chili oil if desired.
