Description

A cozy and creamy casserole that blends savory meatloaf with fluffy mashed potatoes, perfect for weeknight dinners.


Ingredients

  • 900 g (2 lb) russet potatoes
  • 454 g (1 lb) ground beef, 80% lean
  • 150 g (1 medium) yellow onion, finely diced
  • 3 cloves garlic, minced
  • 60 g (3/4 cup) plain or panko breadcrumbs
  • 1 large egg
  • 200 g (about 2 cups) shredded cheddar cheese
  • 120 g (1/2 cup) sour cream
  • 60 ml (1/4 cup) whole milk
  • 60 g (4 tbsp) butter
  • 120 g (1/2 cup) ketchup
  • 2 tbsp (24 g) brown sugar
  • 1 tbsp (15 ml) Worcestershire sauce
  • 10 g (1 3/4 tsp) kosher salt
  • 2 g (1/2 tsp) black pepper
  • 2 tbsp (10 g) chopped chives or green onions

Instructions

  1. Cook and drain the potatoes: Place the russet potatoes in cold salted water, bring to a boil, and simmer until tender, about 12–15 minutes. Drain and steam for 1 minute.
  2. Sauté onions and garlic: Heat oil in a large pan, sauté onions for about 5 minutes, then add garlic for 30 seconds. Add ground beef and brown for 6–8 minutes.
  3. Mix the meat layer: Stir in breadcrumbs, egg, Worcestershire sauce, salt, and pepper. Mix gently to prevent overpacking.
  4. Make the mash: Add butter, sour cream, and milk to the potatoes, mash until smooth, then stir in shredded cheddar and salt.
  5. Assemble the casserole: Preheat oven to 190°C (375°F). Spread the meat mixture in a baking dish, layer the mashed potatoes, and top with cheddar and dots of butter.
  6. Bake and glaze: Bake uncovered for 25 minutes. Mix ketchup, brown sugar, and Worcestershire sauce; glaze the casserole and bake for an additional 10–12 minutes.
  7. Rest and serve: Let the casserole rest for 10 minutes, garnish with chives, and serve warm.

Notes

For a vegetarian version, use cooked lentils instead of ground beef. Adjust baking time if using a different meat type.
