- 2 cups Pancake Mix (Krusteaz recommended)
- 1 ⅓ cups water
- 1 cup Lucky Charms cereal
- 2 tablespoons butter (for cooking)
- 2 cups Ghirardelli white chocolate baking chips
- 1 tablespoon green sprinkles (optional)
Instructions
- In a mixing bowl, combine the all purpose flour, baking powder, and sugar thoroughly to create a balanced base for your pancakes.
- Into the dry mix, pour the milk, crack in the egg, add 3 tablespoons of melted salted butter, and vanilla extract. Stir these gently with a whisk until just blended, avoiding overmixing.
- Gently fold in 1 cup of Lucky Charms cereal to add color, texture, and a sweet crunch.
- Melt a tablespoon of butter over low-medium heat in a frying pan or griddle.
- Using an ice cream scoop, portion about one and a half scoops of batter for each pancake onto the pan. Cook until bubbles start forming on the top, then flip carefully.
- Cook the flipped pancakes for an additional two minutes until golden brown on the bottom.
- Remove cooked pancakes and stack them on a plate to retain heat while cooking the remaining batter.
- Once all pancakes are cooked, optionally top with white chocolate baking chips and green sprinkles, then serve with your favorite syrup.
