  • 1 egg

  • 1 teaspoon vanilla extract
  • 2 cups Pancake Mix (Krusteaz recommended)
  • 1 ⅓ cups water
  • 1 cup Lucky Charms cereal
  • 2 tablespoons butter (for cooking)
  • 2 cups Ghirardelli white chocolate baking chips
  • 1 tablespoon green sprinkles (optional)

Instructions

  1. In a mixing bowl, combine the all purpose flour, baking powder, and sugar thoroughly to create a balanced base for your pancakes.
  2. Into the dry mix, pour the milk, crack in the egg, add 3 tablespoons of melted salted butter, and vanilla extract. Stir these gently with a whisk until just blended, avoiding overmixing.
  3. Gently fold in 1 cup of Lucky Charms cereal to add color, texture, and a sweet crunch.
  4. Melt a tablespoon of butter over low-medium heat in a frying pan or griddle.
  5. Using an ice cream scoop, portion about one and a half scoops of batter for each pancake onto the pan. Cook until bubbles start forming on the top, then flip carefully.
  6. Cook the flipped pancakes for an additional two minutes until golden brown on the bottom.
  7. Remove cooked pancakes and stack them on a plate to retain heat while cooking the remaining batter.
  8. Once all pancakes are cooked, optionally top with white chocolate baking chips and green sprinkles, then serve with your favorite syrup.
