  • 4 slices Bacon
  • 1 cup Chicken Breast
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 cup Roasted Red Peppers
  • 2 cups Baby Spinach
  • 1 tablespoon Fresh Basil
  • 1 package Fresh Tortellini
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese
  • 2 cups Chicken Broth
  • 2 tablespoons Tomato Paste
  • 2 tablespoons Flour
  • 1 teaspoon Red Pepper Flakes

Instructions

  1. Cook bacon in a large pan until almost crisp. Remove and set aside, reserving the fat.
  2. Slice chicken breast, season, coat with flour, and sauté in reserved bacon fat until cooked through. Remove from pan.
  3. Add olive oil to the pan, sauté onion until soft, then add garlic and cook until fragrant.
  4. Stir in tomato paste and roasted red peppers, then sprinkle with flour and stir.
  5. Gradually pour in chicken broth, scraping the pan. Add tortellini and simmer for 5 minutes until tender.
  6. Season sauce with salt, pepper, red pepper flakes, and Italian seasoning. Stir in heavy cream.
  7. Add Parmesan cheese and stir until melted and smooth.
  8. Fold in spinach and basil until spinach wilts. Return chicken and bacon to the pan to warm through.
  9. Serve immediately, optionally topping with extra Parmesan and basil.
