A creamy and velvety matcha rice pudding that delivers a soft chew and bright green tea flavor, perfect for any occasion.
Ingredients

- 160 g (3/4 cup) short-grain rice (sushi or arborio)
- 720 ml (3 cups) whole milk
- 120 ml (1/2 cup) heavy cream
- 60 g (1/4 cup) granulated sugar
- 2 g (1 tsp) matcha powder
- 5 ml (1 tsp) vanilla extract
- A pinch of salt
- 15 g (1 tbsp) unsalted butter (optional)
- Toasted sesame seeds or sweet red bean (adzuki) for garnish
Instructions
- Rinse and drain the rice under cold water until clear, about 1-2 minutes.
- In a saucepan, melt the butter and toast the rice for 3-4 minutes until nutty.
- Add the milk and a pinch of salt, bring to a gentle simmer, then reduce heat to low.
- Simmer for 20-25 minutes, stirring every 2 minutes until the rice is tender.
- Off the heat, stir in sugar, cream, and vanilla. Mix matcha with warm milk to make a paste and stir in.
- Let pudding cool for 5-10 minutes, then serve warm, at room temperature, or chilled with garnishes.
Notes
Optional to substitute Greek yogurt for cream, use coconut milk for a vegan option, and try different sweeteners and garnishes.
