- 100 g all-purpose flour
- ½ tsp vanilla extract
- ½ tsp salt
- 1 tbsp water
- ½ tsp baking powder
Instructions
- Preheat oven to 350 °F (175 °C). Grease a tartlet pan or line with parchment.
- In a food processor, pulse the pistachios until finely ground.
- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract; mix until well combined.
- Gradually incorporate the ground pistachios, flour, salt, and baking powder, mixing until the dough comes together.
- Divide the dough evenly, pressing into the tartlet pan and creating a small lip along the edges.
- Bake for 12–15 minutes or until golden brown.
- Allow tartlets to cool completely before serving.
Notes
- For a flakier crust, keep ingredients cold.
- Consider blind baking with pie weights or dried beans to prevent puffing.
- Top with powdered sugar, chopped pistachios, or a dark chocolate drizzle.
- You can substitute almonds or hazelnuts for pistachios for a variation.
- Serve on mini dessert plates or in mini pastry cups for a polished presentation.
