Ingredients

Scale
  • 1 lb Ground Beef (80/20 blend)
  • 8 oz Mushrooms (Button or Cremini), finely chopped
  • 1 cup Swiss Cheese, shredded
  • 1 medium Onion, finely chopped
  • 1 cup Breadcrumbs
  • 1 large Egg
  • 2 cloves Garlic, minced
  • 1 tsp Thyme
  • 1 tsp Salt
  • 1 tsp Pepper
  • For Serving: Mashed Potatoes, Steamed Vegetables, Fresh Salad

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Finely chop the mushrooms and onion. Shred the Swiss cheese.
  3. In a large bowl, combine ground beef, chopped mushrooms, chopped onion, breadcrumbs, egg, minced garlic, thyme, salt, and pepper. Mix gently until just combined.
  4. Grease a loaf pan. Layer half of the meat mixture into the pan.
  5. Spread half of the shredded Swiss cheese and chopped mushrooms over the meat layer.
  6. Top with the remaining meat mixture, then sprinkle the remaining Swiss cheese on top.
  7. Bake for 55-60 minutes, or until the internal temperature reaches 160°F (71°C).
  8. For a crispier finish, broil for the last 5 minutes.
  9. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For a gluten-free version, substitute breadcrumbs with oats or almond flour.
  • Consider adding sautéed onions for enhanced moisture and flavor.
  • Ensure the meatloaf reaches an internal temperature of 160°F (71°C) for safe consumption.
  • Resting the meatloaf before slicing helps retain juices for a moist texture.
  • This Mushroom Swiss Cheese Meatloaf is a crowd-pleasing comfort food.
