  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1 cup milk
  • 1/4 cup unsalted butter (melted)
  • 1 tablespoon fresh parsley (chopped, for flavor)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, sliced carrots, and sliced celery. Sauté for about 5–7 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional 1 minute.
  3. Pour in the chicken broth and add the dried thyme, dried rosemary, salt, and pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to a simmer and add the cooked chicken and frozen peas (if using). Let it simmer while you prepare the dumplings.
  5. In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and garlic powder (if using).
  6. In another bowl, combine the milk, melted butter, and chopped parsley.
  7. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
  8. Using a spoon or cookie scoop, drop spoonfuls of the dumpling batter directly onto the simmering soup. Leave some space between each dumpling as they will expand while cooking.
  9. Cover the pot with a lid and let the dumplings cook for about 15 minutes. Do not lift the lid during this time, as the steam helps the dumplings rise.
  10. After 15 minutes, check that the dumplings are cooked through (they should be fluffy and firm).
