Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, sliced carrots, and sliced celery. Sauté for about 5–7 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional 1 minute.
- Pour in the chicken broth and add the dried thyme, dried rosemary, salt, and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to a simmer and add the cooked chicken and frozen peas (if using). Let it simmer while you prepare the dumplings.
- In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and garlic powder (if using).
- In another bowl, combine the milk, melted butter, and chopped parsley.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
- Using a spoon or cookie scoop, drop spoonfuls of the dumpling batter directly onto the simmering soup. Leave some space between each dumpling as they will expand while cooking.
- Cover the pot with a lid and let the dumplings cook for about 15 minutes. Do not lift the lid during this time, as the steam helps the dumplings rise.
- After 15 minutes, check that the dumplings are cooked through (they should be fluffy and firm).
