- For the Topping:
- 4 ripe peaches (sliced)
- 1/4 cup unsalted butter
- 1/2 cup brown sugar (packed)
- 1 teaspoon vanilla extract
- For the Cake:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (softened)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
Instructions
- Preheat your oven to 350°F (175°C). Melt the butter in a 9-inch round cake pan over low heat on the stovetop or in the oven.
- Sprinkle the brown sugar evenly over the melted butter and stir in the vanilla extract. Arrange the sliced peaches in a circular pattern on top of the brown sugar mixture and set aside.
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
- Beat the softened butter and granulated sugar together in a large mixing bowl until light and fluffy, about 3–4 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined.
- Carefully pour the cake batter over the arranged peaches in the cake pan and spread it evenly.
- Bake in the preheated oven for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then run a knife around the edges to loosen it.
- Carefully invert the cake onto a serving plate so the peaches are on top. Slice and serve warm or at room temperature.

- Ensure peaches are ripe for best flavor.
- You can substitute buttermilk with milk and vinegar if needed.
