Ingredients

    • 4 ripe peaches (sliced)
    • 1/4 cup unsalted butter
    • 1/2 cup brown sugar (packed)
    • 1 teaspoon vanilla extract
  • For the Cake:
    • 1 1/2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter (softened)
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C). Melt the butter in a 9-inch round cake pan over low heat on the stovetop or in the oven.
  2. Sprinkle the brown sugar evenly over the melted butter and stir in the vanilla extract. Arrange the sliced peaches in a circular pattern on top of the brown sugar mixture and set aside.
  3. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  4. Beat the softened butter and granulated sugar together in a large mixing bowl until light and fluffy, about 3–4 minutes.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined.
  7. Carefully pour the cake batter over the arranged peaches in the cake pan and spread it evenly.
  8. Bake in the preheated oven for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool in the pan for about 10 minutes, then run a knife around the edges to loosen it.
  10. Carefully invert the cake onto a serving plate so the peaches are on top. Slice and serve warm or at room temperature.
