Description

This peanut brittle recipe combines crunchy, sweet, and salty flavors, resembling the center of a Butterfinger.


Ingredients

Scale
  • 2 teaspoons butter (softened, for greasing the pan)
  • 1/2 cup water
  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/2 teaspoon kosher salt
  • 2 cups creamy peanut butter (18 ounces)
  • 1 and 1/2 teaspoons vanilla
  • 2 cups dry roasted salted peanuts
  • 1 tablespoon baking soda

Instructions

  1. Prepare the pan: Grease a half sheet baking pan with softened butter.
  2. Prep the peanut butter: Heat 2 cups of creamy peanut butter in the microwave until liquid.
  3. In a heavy-bottomed pot, add 1/2 cup water.
  4. Add 2 cups granulated sugar to the center of the pot.
  5. Add 1 cup light corn syrup to the pot.
  6. Add 1/2 teaspoon kosher salt.
  7. Set the pot on medium low heat and stir with a wooden spoon.
  8. Let the mixture heat for about 5 minutes until sugar is dissolved.
  9. Bring to a boil and let it boil without stirring until it reaches 300 degrees F.
  10. Add the warmed peanut butter and stir.
  11. Add 1 and 1/2 teaspoons vanilla extract and stir.
  12. Quickly add 2 cups dry roasted peanuts and stir.
  13. Add 1 tablespoon baking soda and stir quickly.
  14. Pour the mixture onto the buttered pan and spread it out.
  15. Let cool for 3 hours or overnight.
  16. Break the brittle into pieces.
  17. Store covered on the counter.
  18. For freezing, layer in a ziplock bag with parchment paper in between.

Notes

  • This brittle resembles the center of a Butterfinger.
  • Store at room temperature for best texture.
