- 2 slices of your favorite bread (sourdough, wheat, or white)
- 2 tablespoons basil pesto
- 1 cup mozzarella cheese, shredded
- 1 tablespoon unsalted butter
- Salt and pepper, to taste
Instructions
- Preheat a skillet or frying pan over medium heat.
- Spread a thin layer of butter on one side of each bread slice.
- On the unbuttered side of one slice, spread a generous layer of basil pesto.
- Sprinkle the shredded mozzarella cheese evenly over the pesto.
- Place the second slice of bread on top, buttered side up.
- Place the sandwich in the preheated skillet. Cook for 3-4 minutes, or until the bottom is golden brown.
- Carefully flip the sandwich and continue cooking for another 3-4 minutes, until the cheese is melted and the other side is also golden brown.
- If desired, sprinkle salt and pepper on the sandwich during the cooking process for added flavor.
- Once done, remove from the skillet and let it cool for a minute. Then slice the sandwich in half.
- Enjoy immediately while the cheese is still ooey-gooey!
