Description

Ingredients

  • 2 slices of your favorite bread (sourdough, wheat, or white)
  • 2 tablespoons basil pesto
  • 1 cup mozzarella cheese, shredded
  • 1 tablespoon unsalted butter
  • Salt and pepper, to taste

Instructions

  1. Preheat a skillet or frying pan over medium heat.
  2. Spread a thin layer of butter on one side of each bread slice.
  3. On the unbuttered side of one slice, spread a generous layer of basil pesto.
  4. Sprinkle the shredded mozzarella cheese evenly over the pesto.
  5. Place the second slice of bread on top, buttered side up.
  6. Place the sandwich in the preheated skillet. Cook for 3-4 minutes, or until the bottom is golden brown.
  7. Carefully flip the sandwich and continue cooking for another 3-4 minutes, until the cheese is melted and the other side is also golden brown.
  8. If desired, sprinkle salt and pepper on the sandwich during the cooking process for added flavor.
  9. Once done, remove from the skillet and let it cool for a minute. Then slice the sandwich in half.
  10. Enjoy immediately while the cheese is still ooey-gooey!
