- 1 (30 oz / 850 g) bag frozen shredded hash browns, thawed
- 2 cups (200 g) shredded sharp cheddar cheese
- 1 cup (250 g) prepared pimento cheese
- 1 (10.5 oz / 298 g) can cream of chicken soup
- 1 cup (240 ml) sour cream
- ½ cup (120 ml) mayonnaise
- 1 small onion, finely diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- Salt and black pepper, to taste
- 1 cup (60 g) crushed buttery crackers or cornflakes (optional topping)
- 2 tablespoons melted butter (optional topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish. Combine thawed hash browns, diced onion, garlic powder, onion powder, paprika, salt, and pepper in a bowl.
- Mix in sour cream, mayonnaise, cream of chicken soup, shredded cheddar cheese, and pimento cheese until fully combined.
- Spread the mixture evenly in the prepared dish. If desired, mix crushed crackers or cornflakes with melted butter and sprinkle on top.
- Bake uncovered for 40–50 minutes, or until bubbling at the edges and lightly golden. Let rest 10 minutes before serving.
