Ingredients

  • 1 (30 oz / 850 g) bag frozen shredded hash browns, thawed
  • 2 cups (200 g) shredded sharp cheddar cheese
  • 1 cup (250 g) prepared pimento cheese
  • 1 (10.5 oz / 298 g) can cream of chicken soup
  • 1 cup (240 ml) sour cream
  • ½ cup (120 ml) mayonnaise
  • 1 small onion, finely diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 cup (60 g) crushed buttery crackers or cornflakes (optional topping)
  • 2 tablespoons melted butter (optional topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish. Combine thawed hash browns, diced onion, garlic powder, onion powder, paprika, salt, and pepper in a bowl.
  2. Mix in sour cream, mayonnaise, cream of chicken soup, shredded cheddar cheese, and pimento cheese until fully combined.
  3. Spread the mixture evenly in the prepared dish. If desired, mix crushed crackers or cornflakes with melted butter and sprinkle on top.
  4. Bake uncovered for 40–50 minutes, or until bubbling at the edges and lightly golden. Let rest 10 minutes before serving.
