Ingredients

  • 1 red bell pepper, diced
  • 1 small red onion, finely diced
  • 12 chipotle peppers in adobo, finely chopped
  • 1 tablespoon adobo sauce (from the can)
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 12 tablespoons lime juice
  • Salt, to taste
  • Black pepper, to taste
  • Use mango or peaches instead of pineapple
  • Add cucumber for extra crunch
  • Use green onions for milder flavor
  • Add corn for sweetness and color
  • Substitute parsley for cilantro
  • Add garlic powder for deeper savory notes
  • Mix in avocado before serving for creaminess

Instructions

  1. Dice the pineapple, red onion, and red bell pepper into small pieces. Mince chipotle peppers and jalapeño. Chop cilantro and squeeze fresh lime juice.
  2. Combine pineapple, bell pepper, red onion, cilantro, chipotle peppers, adobo sauce, and jalapeño in a bowl. Add lime juice, salt, and black pepper.
  3. Add more lime juice for brightness, more chipotle for heat, or a pinch of sugar if the pineapple is not sweet enough. Let sit 10–15 minutes before serving.
