- 1 tablespoon adobo sauce (from the can)
- 1 jalapeño, seeded and minced (optional)
- 1/4 cup fresh cilantro, chopped
- 1–2 tablespoons lime juice
- Salt, to taste
- Black pepper, to taste
- Use mango or peaches instead of pineapple
- Add cucumber for extra crunch
- Use green onions for milder flavor
- Add corn for sweetness and color
- Substitute parsley for cilantro
- Add garlic powder for deeper savory notes
- Mix in avocado before serving for creaminess
Instructions
- Dice the pineapple, red onion, and red bell pepper into small pieces. Mince chipotle peppers and jalapeño. Chop cilantro and squeeze fresh lime juice.
- Combine pineapple, bell pepper, red onion, cilantro, chipotle peppers, adobo sauce, and jalapeño in a bowl. Add lime juice, salt, and black pepper.
- Add more lime juice for brightness, more chipotle for heat, or a pinch of sugar if the pineapple is not sweet enough. Let sit 10–15 minutes before serving.
