  • For the Pineapple Layer:
  • 1 cup fresh pineapple (diced, or canned pineapple chunks, drained)
  • 2 tablespoons sugar (optional, adjust based on sweetness)
  • 1 tablespoon lemon juice

Instructions

  1. In a bowl, combine the diced pineapple, sugar (if using), and lemon juice. Toss gently to coat and set aside to macerate.
  2. In a small bowl, sprinkle the gelatin over the water and let it sit for about 5 minutes to bloom.
  3. Gently heat the bloomed gelatin in the microwave for about 10 seconds until dissolved. Let it cool slightly.
  4. In a mixing bowl, whip the heavy cream and powdered sugar together until soft peaks form. Add the coconut cream and vanilla extract, mixing until well combined.
  5. Stir in the dissolved gelatin until fully incorporated, being careful not to deflate the whipped cream.
  6. In individual serving cups or bowls, add a layer of the coconut mousse, smoothing it out.
  7. Spoon the macerated pineapple on top of the mousse layer.
  8. Add another layer of coconut mousse on top of the pineapple, smoothing the surface.
  9. Cover the cups with plastic wrap and refrigerate for at least 2-4 hours or until set.
  10. Optionally, garnish with toasted coconut flakes, fresh pineapple slices, or mint leaves before serving.
