- For the Pineapple Layer:
- 1 cup fresh pineapple (diced, or canned pineapple chunks, drained)
- 2 tablespoons sugar (optional, adjust based on sweetness)
- 1 tablespoon lemon juice
Instructions
- In a bowl, combine the diced pineapple, sugar (if using), and lemon juice. Toss gently to coat and set aside to macerate.
- In a small bowl, sprinkle the gelatin over the water and let it sit for about 5 minutes to bloom.
- Gently heat the bloomed gelatin in the microwave for about 10 seconds until dissolved. Let it cool slightly.
- In a mixing bowl, whip the heavy cream and powdered sugar together until soft peaks form. Add the coconut cream and vanilla extract, mixing until well combined.
- Stir in the dissolved gelatin until fully incorporated, being careful not to deflate the whipped cream.
- In individual serving cups or bowls, add a layer of the coconut mousse, smoothing it out.
- Spoon the macerated pineapple on top of the mousse layer.
- Add another layer of coconut mousse on top of the pineapple, smoothing the surface.
- Cover the cups with plastic wrap and refrigerate for at least 2-4 hours or until set.
- Optionally, garnish with toasted coconut flakes, fresh pineapple slices, or mint leaves before serving.
