- 8 oz (225g) feta cheese, crumbled
- ¼ cup (60g) Greek yogurt or cream cheese
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 garlic clove, minced (optional)
- Salt and black pepper, to taste
- ½ cup pomegranate arils
- ¼ cup roasted pistachios, chopped
- Fresh herbs (parsley or mint) for garnish
- Olive oil for drizzling (optional)
Instructions
- In a food processor, combine crumbled feta cheese, Greek yogurt (or cream cheese), olive oil, lemon juice, and garlic. Blend until smooth and creamy. Season with salt and pepper to taste.
- Transfer the whipped feta to a shallow bowl or serving dish and smooth the top with the back of a spoon.
- Evenly scatter the pomegranate arils and chopped pistachios over the whipped feta.
- Drizzle with olive oil (optional) and garnish with fresh herbs. Serve immediately with pita, crackers, or fresh veggies.
