Savory Pork and Peppers Stir-Fry for a Flavorful Feast

- 300 g pork belly
- 2 tbsp vegetable oil
- 1 each medium red capsicum
- 1 each medium green capsicum
- 1 each medium yellow capsicum
- 1 tbsp concentrated chicken stock
- 0.5 tsp sugar
- 1 tbsp Shaoxing wine
- 1 tsp cornstarch mixed with cold water
- 1 tsp soy sauce
- a pinch bicarbonate of soda
- 0.5 tsp cornflour
- a little white pepper
Instructions
- Slice the pork belly into long, thin strips about 1 cm wide, then chop them into 3 cm pieces. Combine with marinade ingredients.
- Preheat a wok over high heat. Pour in vegetable oil and add the pork, cooking without stirring for about 2 minutes until browned.
- Add the red, green, and yellow capsicums to the wok, toss for a minute, then add chicken stock, Shaoxing wine, and sugar. Add a splash of water if dry.
- Toss everything together and gradually add cornstarch mixture, stirring until the sauce thickens and coats the pork and peppers.
- Transfer the stir-fry to a plate and serve with rice or noodles.
- Optional: Garnish with fresh cilantro for extra flavor.
