Description

Ingredients

  • 2 ripe bananas (mashed)
  • 2 cups unsweetened almond milk (or any milk of choice)
  • 1/2 cup vanilla protein powder (or preferred flavor)
  • 1/4 cup cornstarch
  • 1/4 cup erythritol (or preferred sugar substitute)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional toppings: sliced bananas, crushed graham crackers, or whipped cream

Instructions

  1. In a medium saucepan, whisk together the almond milk, mashed bananas, vanilla protein powder, cornstarch, erythritol, vanilla extract, and salt until smooth.
  2. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and starts to bubble (about 5–7 minutes).
  3. Once thickened, reduce the heat to low and cook for an additional 2–3 minutes, stirring continuously.
  4. Remove the saucepan from heat and pour the pudding into a bowl or individual serving cups.
  5. Allow the pudding to cool at room temperature for a few minutes, then cover and refrigerate for at least 1 hour to set.
  6. Before serving, top with sliced bananas, crushed graham crackers, or whipped cream if desired.

Notes
