  • 1/4 tsp red pepper flakes (optional)
  • 1 (15 oz) can diced tomatoes, undrained
  • 2 large eggs
  • Salt and pepper to taste
  • Feta cheese, crumbled (optional, for topping)
  • Fresh cilantro or parsley, chopped (optional, for garnish)

Instructions

  1. Toast the bread slices until golden brown.
  2. Heat olive oil in a small skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic, cumin, paprika, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  4. Pour in the diced tomatoes with their juice. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly. Season with salt and pepper.
  5. Create two wells in the tomato sauce. Crack an egg into each well.
  6. Cover the skillet and cook for 5-8 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness.
  7. Carefully spoon the shakshuka mixture over the toasted bread slices.
