- 1 (15 oz) can diced tomatoes, undrained
- 2 large eggs
- Salt and pepper to taste
- Feta cheese, crumbled (optional, for topping)
- Fresh cilantro or parsley, chopped (optional, for garnish)
Instructions
- Toast the bread slices until golden brown.
- Heat olive oil in a small skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, cumin, paprika, and red pepper flakes (if using). Cook for 1 minute until fragrant.
- Pour in the diced tomatoes with their juice. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly. Season with salt and pepper.
- Create two wells in the tomato sauce. Crack an egg into each well.
