The Ultimate Garlic Butter Shrimp Scampi for Quick Dinners
Ingredients

- 1 lb (450g) large shrimp, peeled and deveined
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 5 garlic cloves, minced
- ½ teaspoon crushed red pepper flakes (optional)
- Juice of 1 lemon (about 2 tablespoons)
- Zest of 1 lemon
- ¼ cup (60ml) chicken broth or seafood stock (optional)
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh parsley
- Freshly grated Parmesan cheese (optional for serving)
- 8 oz (225g) linguine or spaghetti (optional)
Instructions
- If frozen, thaw under cold water and pat dry. Season with salt and pepper.
- If serving with pasta, cook in salted water. Reserve ½ cup of pasta water before draining.
- In a large skillet, heat 1 tablespoon butter and olive oil over medium heat. Add garlic and red pepper flakes, sautéing for 30 seconds.
- Add shrimp in a single layer. Cook 2–3 minutes per side until pink and opaque.
- Add lemon juice, zest, and broth. Simmer for 1–2 minutes. Stir in remaining butter for a silky finish.
- Mix pasta into the sauce if using, or serve shrimp with bread or veggies. Garnish with parsley and Parmesan.
