A game-changing smoked mac and cheese recipe that elevates your usual baked version with bold flavors and creamy textures.

Ingredients

Scale
  • 2 cups elbow macaroni or cavatappi
  • 4 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk or heavy cream
  • 2 cups shredded cheddar cheese
  • 1 cup shredded gouda cheese
  • 1 cup mozzarella cheese

  • Black pepper, to taste
  • Paprika, to taste
  • Optional: Smoky bacon bits

Instructions

  1. Preheat your smoker to 225°F.
  2. Boil the macaroni until barely tender, avoiding mushiness.
  3. In a pot, melt the butter and whisk in flour, cooking for a couple of minutes.
  4. Gradually add milk or cream, stirring until creamy.
  5. Add the cheese, stirring until melted and well-combined.
  6. Mix the cooked noodles with the cheese sauce until fully coated.
  7. Transfer the mixture to an aluminum pan and place it in the smoker.
  8. Let it smoke for about an hour, checking occasionally to prevent dryness.

Notes

Experiment with different cheese variations for unique flavors. Optional toppings like crispy panko breadcrumbs and bacon bits add crunch and richness.
