  • ½ cup light brown sugar
  • ¾ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon table salt
  • ½ cup chopped pecans or walnuts (optional)
  • ½ cup cold unsalted butter (cubed)
  • ½ cup unsalted butter (1 stick, softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup sour cream (full-fat)
  • ½ teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon table salt

Instructions

  1. Preheat your oven to 350℉ (175℃). Grease an 8-inch cake pan generously with butter.
  2. In a small bowl whisk together 2 tablespoons light brown sugar, 1 tablespoon all-purpose flour, and 1 teaspoon ground cinnamon. Set aside for the cinnamon swirl.
  3. In a medium bowl, combine ½ cup light brown sugar, ¾ cup all-purpose flour, 1 teaspoon ground cinnamon, ⅛ teaspoon table salt, and ½ cup chopped pecans or walnuts, if using. Add ½ cup cold unsalted butter (cubed), and mix until crumbs form. Set aside.
  4. Cream together ½ cup unsalted butter and 1 cup granulated sugar on medium-high speed until pale and fluffy, about 3-5 minutes. Add 2 large eggs, mix again, then add 1 cup sour cream and ½ teaspoon vanilla extract. Mix until well combined.
  5. In a separate bowl, whisk or sift 1½ cups all-purpose flour with ½ teaspoon baking powder, ¼ teaspoon baking soda, and ¼ teaspoon table salt.
  6. Add dry ingredients to the creamed mixture, folding gently until just combined.
  7. Spoon half of the batter into the prepared pan and smooth it out. Sprinkle the cinnamon filling over it.
  8. Spoon the remaining batter over the filling and smooth it out. Sprinkle the streusel mixture on top.
  9. Bake for 35-45 minutes or until a toothpick inserted comes out clean. Check after 25 minutes to see if the streusel is browning too much; tent with foil if necessary.
  10. Cool for at least 10 minutes before serving.
