Description

A nutritious and hearty dish made with lentils and carrots, seasoned with spices.


Ingredients

  • 1 cup green or brown lentils (rinsed and drained)
  • 2 cups vegetable broth (or water)
  • 2 tablespoons olive oil
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2 medium carrots (sliced or diced)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper (to taste)
  • 2 cups fresh spinach (or kale)
  • 1/4 cup fresh cilantro (chopped, for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a medium saucepan, combine the rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 20–25 minutes, or until the lentils are tender. Drain any excess liquid if necessary.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the diced onion and sauté for about 5 minutes until softened. Add the minced garlic and sauté for an additional 30 seconds until fragrant.
  4. Stir in the sliced carrots, ground cumin, ground coriander, smoked paprika, turmeric, salt, and pepper. Cook for about 5–7 minutes, until the carrots are tender.
  5. Stir the cooked lentils into the skillet with the carrots and spices. Add the fresh spinach and cook for another 2–3 minutes, until the spinach is wilted and everything is heated through.
  6. Divide the spiced lentil and carrot mixture among serving bowls.
  7. Top with chopped fresh cilantro and serve with lemon wedges on the side.
