Description

This Spicy Chicken Spaghetti recipe is a comforting and flavorful casserole that blends Southern comfort with Tex-Mex heat. It features tender chicken, creamy sauce, and melted cheese, making it perfect for weeknights or potlucks.

Ingredients

Scale
  • 1 tablespoon butter
  • 1 medium sweet onion, chopped
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon garlic powder
  • 1 can condensed cream of chicken soup
  • 1 (10-ounce) can Rotel Tomatoes with Green Chilies
  • 1 pound pasteurized cheese product, cubed
  • 1/3 cup milk
  • 3 cups cooked chicken, chopped
  • Black pepper, to taste
  • 12 ounces spaghetti, cooked al dente
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.
  2. Melt butter in a large nonstick skillet over medium heat. Add chopped onion and sauté for 4-5 minutes until softened.
  3. Add seasoned salt, garlic powder, condensed cream of chicken soup, Rotel tomatoes, cubed cheese product, and milk to the skillet. Stir until the cheese is completely melted and the sauce is smooth and creamy.
  4. Fold in the chopped cooked chicken and season with black pepper to your preference.
  5. Gently fold the cooked spaghetti into the sauce mixture, ensuring all strands are coated.
  6. Pour the mixture into the prepared casserole dish. Cover with aluminum foil and bake for 20 minutes.
  7. Remove the foil, sprinkle shredded cheddar cheese evenly over the top, and bake uncovered for an additional 5 minutes, or until the cheese is melted and golden.

Notes

  • Use rotisserie chicken for added convenience and flavor.
  • Cook spaghetti to al dente to prevent it from becoming mushy after baking.
  • For extra spice, use Hot Rotel tomatoes or add a pinch of cayenne pepper.
  • Shredding your own cheese will result in a smoother melt.
  • Let the casserole rest for 5 minutes after baking before serving.
