Soft and fruity cookies made with freeze-dried strawberries and creamy white chocolate chips.
Ingredients

- 1 cup soft butter
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 2 large eggs
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup freeze-dried strawberries, chopped
- 1 cup white chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the butter, white sugar, and brown sugar until smooth.
- Beat in the eggs one at a time.
- In another bowl, combine the flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Gently fold in the chopped freeze-dried strawberries and white chocolate chips.
- Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden but the centers are still soft.
- Let them cool on the pan for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container with a slice of white bread to keep them soft. Freeze for longer storage.
