  • 2 cups heavy cream

Instructions

  1. In a small saucepan, combine chopped strawberries, 1/4 cup sugar, and cornstarch. Cook over medium heat, stirring frequently until the mixture thickens and the strawberries break down, forming a syrupy sauce. Remove from heat and let cool completely.
  2. Crush graham cracker cookies finely. Mix the crumbs with 1/2 tablespoon sugar and melted butter until evenly combined. Set aside for later incorporation.
  3. In a large mixing bowl, beat softened cream cheese until smooth. Gradually add 1 cup white sugar and continue to beat until well combined and creamy.
  4. Slowly mix in the heavy cream and whole milk into the cream cheese and sugar mixture until fully incorporated, resulting in a smooth ice cream base.
  5. Cover the ice cream base and refrigerate it for at least 2 hours to ensure it is thoroughly chilled before churning.
  6. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  7. In a suitable container, alternate layers of churned ice cream, strawberry sauce, and graham cracker crust. Use a spatula or knife to gently swirl the strawberry sauce and graham cracker crust through the ice cream without fully mixing them.
