- 226 g (1 cup) unsalted butter, softened
- 100 g (1/2 cup) granulated sugar
- 110 g (1/2 cup, packed) light brown sugar
- 50 g (1 large) large egg
- 5 ml (1 tsp) pure vanilla extract
- 300 g (2 1/3 cups) all-purpose flour
- 15 g (2 tbsp) cornstarch
- 5 g (1 tsp) baking powder
- 4 g (3/4 tsp) kosher salt
- 30 g (1/3 cup) freeze-dried strawberry powder
- 120 g (1/2 cup) jam (strawberry or raspberry) for centers
- Optional: 15 g (2 tbsp) powdered sugar for dusting
Instructions
- Preheat the oven to 175°C (350°F) and line two baking sheets with parchment paper.
- Cream the butter and sugars together in a mixer on medium speed for 2-3 minutes until light and fluffy.
- Add the egg and vanilla, mixing just until combined.
- In a separate bowl, whisk together the flour, cornstarch, baking powder, salt, and freeze-dried strawberry powder.
- Gradually mix the dry ingredients into the wet mixture until just incorporated.
- Portion dough onto prepared sheets using a cookie scoop and chill in the fridge for 15 minutes.
- Bake one sheet at a time for 9-12 minutes until edges are set and tops are lightly golden.
- Press a small well in the center of each cookie and fill with jam. Let cool on the baking sheet for 5 minutes before transferring to a rack.
Notes
For variations, try using freeze-dried raspberry powder instead of strawberry or dip cookies in melted dark chocolate.
