Ingredients
- Sugar cookie dough (store-bought or homemade)
- Cream cheese (softened)
- Sour cream
- Granulated sugar

Instructions
- Preheat your oven to 325°F (160°C).
- If using store-bought sugar cookie dough, press it into the bottom of a 9-inch springform pan evenly. If making from scratch, roll out the dough and place it in the pan. Bake for 10-12 minutes or until lightly golden. Let it cool while you prepare the filling.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the sugar and mix well.
- Mix in the sour cream until fully combined, then add the eggs one at a time, mixing well after each addition. Finally, stir in the vanilla extract.
- Pour the cheesecake filling over the cooled sugar cookie crust in the springform pan. Use a spatula to smooth the top.
- Place the springform pan in the preheated oven. Bake for 50-60 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool slowly for about an hour.
- Once cooled, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, but overnight is best for a firmer texture.
