- 1 bell pepper, sliced
- 1 carrot, thinly sliced
- 1 cup broccoli florets
- 2 green onions, chopped

Instructions
- Cut the chicken breasts into bite-sized pieces for even cooking.
- In a bowl, combine sweet chili sauce, soy sauce, rice vinegar, vegetable oil, minced garlic, and grated ginger.
- Add the chicken pieces to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
- In a large skillet or wok, heat a tablespoon of vegetable oil over medium-high heat.
- Add the marinated chicken to the pan and cook for about 5-7 minutes, or until golden brown and cooked through.
- Stir in the sliced bell pepper, carrot, and broccoli florets. Cook for an additional 3-5 minutes until the vegetables are tender but still crisp.
- Pour any remaining marinade over the chicken and vegetables, stirring to coat evenly. Cook for another 2-3 minutes until heated through.
- Remove from heat and garnish with chopped green onions, sesame seeds, and fresh cilantro.
