Description

A hearty and flavorful chili featuring tender chunks of beef and sweet potatoes, perfect for a comforting meal.


Ingredients

  • 1.5 lbs ground beef
  • 1 large sweet potato, peeled and diced
  • 1 large onion, chopped
  • 2 bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
  3. Add chopped onion and bell peppers to the pot and cook until softened, about 5-7 minutes.
  4. Stir in minced garlic, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  5. Add diced sweet potato, crushed tomatoes, kidney beans, black beans, and beef broth to the pot.
  6. Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 1 hour, or until sweet potatoes are tender and flavors have melded. Stir occasionally.
  7. Season with salt and black pepper to taste.
  8. Serve hot.

Notes

  • For a slower cooker version, brown the beef and sauté the vegetables first. Then combine all ingredients in a slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  • Adjust chili powder and cayenne pepper for desired spice level.
  • Serve with your favorite chili toppings like shredded cheese, sour cream, or chopped cilantro.
