- 1.5 lbs ground beef
- 1 large sweet potato, peeled and diced
- 1 large onion, chopped
- 2 bell peppers, chopped
- 3 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (15 ounce) can black beans, drained and rinsed
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
- Add chopped onion and bell peppers to the pot and cook until softened, about 5-7 minutes.
- Stir in minced garlic, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Add diced sweet potato, crushed tomatoes, kidney beans, black beans, and beef broth to the pot.
- Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 1 hour, or until sweet potatoes are tender and flavors have melded. Stir occasionally.
- Season with salt and black pepper to taste.
- Serve hot.
Notes
- For a slower cooker version, brown the beef and sauté the vegetables first. Then combine all ingredients in a slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
- Adjust chili powder and cayenne pepper for desired spice level.
- Serve with your favorite chili toppings like shredded cheese, sour cream, or chopped cilantro.
