- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract

Instructions
- Preheat your oven to 325°F (163°C).
- Smash the graham crackers or ginger snaps into fine crumbs and mix with melted butter.
- Press the crumb mixture into the bottom of a baking pan to form the crust.
- Bake the crust for 5-7 minutes until set, then let it cool.
- In a mixing bowl, beat the softened cream cheese and sugar until smooth.
- Mix in the eggs one at a time, and then add the vanilla extract. Be careful not to overmix.
- Pour the cream cheese mixture over the cooled crust.
- Bake the cheesecake, watching for a slight jiggle in the center, about 45-50 minutes.
- Allow the cheesecake to cool to room temperature before chilling it in the fridge for at least 4 hours.
- Top with fresh fruit just before serving.
Notes
For a creamier texture and to prevent cracks, consider using a water bath while baking. Allowing the cheesecake to chill overnight improves flavor.
