  • 1 cup taco meat (use leftovers or prepare taco meat using ground beef, turkey, or chicken with taco seasoning)
  • 1 cup refried beans
  • 12 cups grated jack or cheddar cheese
  • 1 large avocado, lightly mashed
  • 4 burrito-size flour tortillas (room temperature)
  • 23 tablespoons salted butter or vegetable oil

Instructions

  1. Place a flour tortilla flat on your workspace. Use a sharp knife or kitchen scissors to make a single straight cut from the center of the tortilla to the edge, creating a dividing line. Rotate the tortilla so the cut line faces downward.
  2. Visualize the tortilla divided into four quadrants around the cut line. Quadrant 1 is the immediate left of the cut, and then moving clockwise to quadrants 2, 3, and 4.
  3. Spread about 1/4 cup of refried beans evenly over quadrant 1 to cover the entire area.
  4. Place about 1/4 cup of the seasoned taco meat, spreading it in a single layer to cover quadrant 2.
  5. Lightly mash and spread 1/4 of the avocado evenly in quadrant 3.
  6. Generously sprinkle 1/4 to 1/2 cup of grated jack or cheddar cheese over quadrant 4, ensuring good coverage.
  7. Starting with quadrant 1, flip it up onto quadrant 2, then continue folding clockwise, creating a compact triangle. The beans on quadrant 1 will help keep the fillings in place.
  8. In a medium saucepan, melt a small amount of butter over medium heat. Carefully lift the folded quesadilla into the pan, placing it so the cheese side is on the bottom.
  9. Cook the quesadilla on medium to medium-low heat until the bottom turns golden brown and the cheese inside melts.
  10. Add a bit more butter to the pan or spread butter on the top side of the quesadilla before flipping it over. Continue cooking until the second side is browned and crisp.
