Description
Juicy, pan-seared salmon fillets in a creamy garlic, spinach, and tomato sauce.
Ingredients

- 2 Salmon fillets (6 oz each), skin on or off
- 1 tbsp Olive oil
- 2 tbsp Butter
- 3–4 cloves Garlic, minced
- 1/4 cup Sun-dried tomatoes (oil-packed), chopped
- 1 cup Heavy cream
- 1 cup Fresh spinach
- 1/4 cup Grated Parmesan cheese
- 1/4 tsp Red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- Fresh parsley or basil, for garnish (optional)
Instructions
- Pat salmon fillets thoroughly with paper towels.
- Heat a pan over medium-high heat.
- Add salmon fillets to the hot pan and sear for 3-4 minutes per side until golden brown and cooked through.
- Remove salmon from the pan and set aside.
- In the same pan, melt butter or heat olive oil over medium heat.
- Sauté minced garlic until fragrant, but not browned.
- Stir in chopped sun-dried tomatoes and cook briefly.
- Pour in heavy cream and let it simmer gently until slightly thickened.
- Stir in spinach until just wilted.
- Stir in Parmesan cheese and red pepper flakes (if using).
- Season with salt and pepper to taste.
- Return salmon to the pan to warm through, or pour sauce over salmon.
- Garnish with fresh parsley or basil, if desired.
