Description

Juicy, pan-seared salmon fillets in a creamy garlic, spinach, and tomato sauce.


Ingredients

Scale
  • 2 Salmon fillets (6 oz each), skin on or off
  • 1 tbsp Olive oil
  • 2 tbsp Butter
  • 34 cloves Garlic, minced
  • 1/4 cup Sun-dried tomatoes (oil-packed), chopped
  • 1 cup Heavy cream
  • 1 cup Fresh spinach
  • 1/4 cup Grated Parmesan cheese
  • 1/4 tsp Red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or basil, for garnish (optional)

Instructions

  1. Pat salmon fillets thoroughly with paper towels.
  2. Heat a pan over medium-high heat.
  3. Add salmon fillets to the hot pan and sear for 3-4 minutes per side until golden brown and cooked through.
  4. Remove salmon from the pan and set aside.
  5. In the same pan, melt butter or heat olive oil over medium heat.
  6. Sauté minced garlic until fragrant, but not browned.
  7. Stir in chopped sun-dried tomatoes and cook briefly.
  8. Pour in heavy cream and let it simmer gently until slightly thickened.
  9. Stir in spinach until just wilted.
  10. Stir in Parmesan cheese and red pepper flakes (if using).
  11. Season with salt and pepper to taste.
  12. Return salmon to the pan to warm through, or pour sauce over salmon.
  13. Garnish with fresh parsley or basil, if desired.
