A hearty and flavorful Tuscan sausage stew, featuring tender Italian sausage, creamy white beans, and aromatic Tuscan herbs. This easy one-pot meal is perfect for a comforting dinner.

- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 4 cups chicken broth
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute until fragrant.
- Return the sausage to the pot. Add chicken broth, cannellini beans, and diced tomatoes. Bring to a simmer.
- Reduce heat to low, cover, and cook for at least 20 minutes, or until flavors have melded. For a thicker stew, you can mash some of the beans against the side of the pot.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.

- For a creamier Tuscan sausage stew, stir in a splash of heavy cream or coconut milk at the end of cooking.
