Description

A hearty and flavorful Tuscan sausage stew, featuring tender Italian sausage, creamy white beans, and aromatic Tuscan herbs. This easy one-pot meal is perfect for a comforting dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  4. Return the sausage to the pot. Add chicken broth, cannellini beans, and diced tomatoes. Bring to a simmer.
  5. Reduce heat to low, cover, and cook for at least 20 minutes, or until flavors have melded. For a thicker stew, you can mash some of the beans against the side of the pot.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For a creamier Tuscan sausage stew, stir in a splash of heavy cream or coconut milk at the end of cooking.
  • Add kale or spinach in the last 5 minutes of cooking for a Tuscan sausage and kale stew.
