- 1.0 bay leaf
- 2.0 tablespoons olive oil

Instructions
- Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onions, celery, and carrots. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables have softened.
- Add Garlic and Spices: Stir in the minced garlic, thyme, rosemary, and smoked paprika. Cook for an additional 1-2 minutes until fragrant.
- Add Broth and Rice: Pour in the turkey broth and bring the mixture to a gentle boil. Stir in the uncooked rice, bay leaf, and season with salt and pepper to taste.
- Simmer: Reduce the heat to low and let the soup simmer uncovered for about 15-20 minutes, or until the rice is tender. Stir occasionally to prevent sticking.
- Add the Turkey and Peas: Once the rice is cooked, add the shredded turkey and frozen peas (if using) to the pot. Cook for an additional 5 minutes until everything is heated through.
- Finalize the Seasoning: Taste the soup and adjust the seasoning as needed with more salt and pepper.
- Serve: Remove the bay leaf before serving. Ladle the soup into bowls and garnish with fresh parsley or thyme for a pop of flavor and color.
