Description

A comforting holiday soup with turkey, rice, and vegetables.

Ingredients

Scale
  • 2.0 cups cooked turkey, shredded or diced
  • 1.0 cup long-grain white rice, uncooked
  • 6.0 cups turkey broth
  • 1.0 cup celery, chopped
  • 1.0 cup carrots, diced
  • 1.0 cup onion, chopped
  • 3.0 cloves garlic, minced
  • 1.0 teaspoon dried thyme
  • 1.0 teaspoon dried rosemary
  • 1.0 teaspoon smoked paprika
  • 1.0 bay leaf
  • 2.0 tablespoons olive oil
  • to taste salt and pepper
  • 1.0 cup frozen peas
  • to garnish fresh parsley or thyme

Instructions

  1. Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onions, celery, and carrots. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables have softened.
  2. Add Garlic and Spices: Stir in the minced garlic, thyme, rosemary, and smoked paprika. Cook for an additional 1-2 minutes until fragrant.
  3. Add Broth and Rice: Pour in the turkey broth and bring the mixture to a gentle boil. Stir in the uncooked rice, bay leaf, and season with salt and pepper to taste.
  4. Simmer: Reduce the heat to low and let the soup simmer uncovered for about 15-20 minutes, or until the rice is tender. Stir occasionally to prevent sticking.
  5. Add the Turkey and Peas: Once the rice is cooked, add the shredded turkey and frozen peas (if using) to the pot. Cook for an additional 5 minutes until everything is heated through.
  6. Finalize the Seasoning: Taste the soup and adjust the seasoning as needed with more salt and pepper.
  7. Serve: Remove the bay leaf before serving. Ladle the soup into bowls and garnish with fresh parsley or thyme for a pop of flavor and color.
  8. Enjoy: Serve hot, with crusty bread on the side, for a comforting and delightful holiday meal.
