Description

Grilled Cuban mojo chicken thighs marinated for bold, zesty flavors that are sure to impress your guests.


Ingredients

  • Juice of 1 orange
  • 6 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Chopped fresh mint (optional)
  • 1 tablespoon brown sugar (optional)
  • 4 chicken thighs

Instructions

  1. Mix all marinade ingredients in a bowl or jar.
  2. Pat chicken thighs dry and toss them in the marinade until well coated.
  3. Let the chicken marinate for at least 2 hours or overnight for best results.
  4. Preheat the grill to medium-high heat.
  5. Place chicken thighs on the grill skin-side down and grill until marked, flipping once.
