Ingredients

  • 1/2 each Yellow Onion (Shallots can be a great alternative.)
  • 4 each Green Onions (Chives are a nice option if you’re out of green onions.)
  • 1/2 tbsp Korean Solar Sea Salt (Regular sea salt works just fine if Korean salt isn’t available.)
  • 2.5 tbsp Korean Chili Powder (Gochugaru) (Adjust based on your spice preference.)
  • 1 tbsp Anchovy Sauce or Fish Sauce (Soy sauce can be used for a vegetarian alternative.)
  • 1 tbsp Chopped Garlic (Garlic powder can be used if fresh garlic isn’t on hand.)
  • 1/4 tsp Grated or Chopped Ginger (Feel free to skip if ginger isn’t your favorite.)
  • 1 tsp Green Plum Syrup (Sugar can be substituted if necessary.)

Instructions

  1. Begin by washing 2 pounds of Fuji apples under cool running water. Core and cut the apples into bite-sized pieces, leaving the skin on. Place the chopped apple pieces into a large mixing bowl.
  2. Next, take half a yellow onion and cut it into 3/4-inch cubes. Chop four green onions into 1.5-inch pieces. Add both the yellow and green onion pieces to the bowl with the chopped apples.
  3. Sprinkle 1/2 tablespoon of Korean solar sea salt over the mixture. Use your hands to gently toss everything together.
  4. Incorporate 2.5 tablespoons of Korean chili powder, 1 tablespoon of anchovy sauce, 1 tablespoon of chopped garlic, 1/4 teaspoon of grated ginger, and 1 teaspoon of green plum syrup into the bowl. Mix thoroughly.
  5. Once everything is well-combined, your Apple Kimchi is ready to enjoy! Serve immediately or refrigerate to let flavors deepen.
